Classic Pancakes with Special Ingredient

Pancakes make me think of lazy weekends with family and friends. I have looked up tons of recipes in search of the best pancake. Here is what has become a stand-by for me:

1 cup flour
2 table spoons sugar
2 teaspoons baking powder
1 teaspoon salt
1 cup milk (or almond milk)
2 table spoons of melted butter (or margarine)
1 egg

**Special ingredient: 1/8 teaspoon vanilla extract

– Combine wet ingredients then add dry.
– Oil (I like an oil spray) the pan and heat on medium.
– Pour batter to make 4 little pancakes.
– Watch for bubbles at about 2 minutes then flip.

The vanilla extract adds just a little something special but doesn’t over power that classic pancake taste. With practice, you can have a proud little pancake just like mine.
